The speakeasy starts with the reservation and arrival, where you need a code to enter. The interior is more darken due to there are no windows, what is for some could be a border. It is a more lighted nightclub. Intimacy but also not that much due to tables are quite close to one another, so you still hear conversation especially when it is busy it is a speakeasy for those who find the entrée, but I will suggest to open up if this is their goal, because it feels like individual pots but also not.
The service is very friendly and low-key not too tight but if they ask you after each course how it is, it becomes annoyed, especially when they service 15 courses. Also, They are not really keen on selling wine by the glass, but they still know people prefer it, so still offer it. What I do not know is a good thing on their hospitality.
The interior at first look very lovely but when you look closer it seems to be very cheap kinda feeling, quality and maintenance, especially in the bathroom where the lighting is more bright. Also, the interior planning I do not really odd, the logic I do not understand quite open and closed at the same time.
Another strange thing is their cutlery service, they give you option of what you prefer to use, but that set is the only set you get through the whole meal. You need to reuse it, OK maybe it is something with eco-friendly (less washing) but they do not give you like a holder that can rest your cutlery on it. They recommend putting it on the table, what is strange. So I just put it on the selection of cutlery holder.
The bread plate, it is a bowl, I was really struggling with it because I still need to place my piece of bread in it and also my butter, what is difficult without the bread touching the butter.
The Food
Very lovely done, nice elements, but less they are quite standard combination and sauces. No new things that I have tasted. I could say, if you want an average meal and just want to rest a bit after a work day, this is a nice place to eat. Some dishes are done great, some average and some just meh (did I need to come to a Michelin star restaurant for this?).
The most surprising is 1 dish and the highlight for me is the X dessert. Where technic place a vital role, exterior is white chocolate with interior layers of elements. Where the crumble is to serve mostly on the plate to prevent the ice cream to shift, in this dish it really cut through the whole sweet dish, as it is made of coffee and had a strong coffee bitterness what is really great, because most of the time it is so focused on sweetness in desserts, making people hate desserts.
Overall I will recommend this restaurant especially the price quality is high, also the wine list extend but more expensive than the average Amsterdam's restaurants. They do have good pricing on it.
Een voortreffelijk avontuur waarbij je een spannende, ontspannen en feestelijke lunch geserveerd krijgt. Gerechten zijn echt ontzettend lekker, verrassend en prachtig geserveerd. Vriendelijk personeel en sfeer is goed. We komen terug; een aanrader!!

Over Graphite
Graphite is het eerste speakeasy restaurant van Nederland en gelegen in de Paardenstraat vlakbij Rembrandtplein. Het restaurant is mysterieus en moeilijk te vinden. Je moet dus op zoek gaan naar een deur met een scanner en je QR code meenemen.
De setting in het restaurant doet denken aan bars ten tijde van de Amerikaanse drooglegging. Een intiem maar toch ruimtelijk restaurant met een clubby-sfeer, luide muziek en gedimde lichten. Een geheimzinnige omgeving.
Chef Peter Gast heeft zijn sporen verdiend in de afgelopen 16 jaar als chef van restaurant 't Schultenhues in Zutphen. Hij bereidt klassieke gerechten en verfijnde sauzen en combineert deze met inventieve ideeën.
In 2020 is Graphite bekroond met 1 Michelinster en in totaal hebben ze 16 Gault&Millau punten.
